Vegetarians are the ones who suffer the most during the holiday season, most dishes are prepared with some type of meat and then those who don't eat end up having to make do with side dishes or salads. To end this problem, here are some suggestions for recipes that don't take meat.

vegetables with soy

Ingredients:

  • 1 cup (tea) of soy
  • 6 cups of water (tea)
  • 1 packet of vegetable broth
  • 2 tablespoons of olive oil
  • 1 onion cut into cubes
  • 2 skinless and seeded tomatoes, diced
  • 1/2 yellow pepper cut into cubes
  • 1 medium zucchini cut into cubes
  • 2 tablespoons of chopped parsley (or parsley)
  • 1 tablespoon chopped green onions
  • salt to taste

How to make:



In a pressure cooker, place the soy with half the water. Let it cook for five minutes after the pressure starts. Turn off the heat and add the rest of the water and the vegetable broth, let it cook for another 20 minutes or until the soy is soft. In another pan, heat the oil, brown the onion, add the tomato, pepper and soy with the broth. Add the zucchini, season with salt and pepper and cook until the vegetables are soft and crispy. Add parsley and chives and serve immediately.

Ingredients

  • 4 small potatoes
  • 2 tablespoons of olive oil
  • 1 large onion cut into thin rings
  • 1 cup of cottage cheese
  • 4 eggs
  • salt to taste
  • parsley (or parsley) chopped to taste
  • paprika to taste

How to make:



Cut the potatoes into slices and without the skin. Then, cook with water and salt until they are soft. In a skillet, heat the oil and brown the onion. Season the potatoes with salt and paprika.

In individual bowls, alternate layers of potato, curd and onion. On each one, place a raw egg, sprinkle with parsley and bake in a preheated oven at 200º C for 15 minutes. Okay, now just serve!

Quiche From Spinach

Ingredients

  • 300 g spinach, drained and chopped
  • 3/4 cups grated light Parmesan cheese
  • 3 eggs
  • 1/2 chopped green pepper
  • 1 small onion chopped
  • salt to taste
  • black pepper to taste

Way of doing


Mix spinach, grated cheese, eggs, bell pepper, onion, salt and pepper in a bowl. Place everything in a buttered quiche mold.


Bake in the oven, preheated to 200ºC, for 25 minutes or until golden. Serve while still hot.

Egg and vegetable terrine

Ingredients

  • 1/2 can of peas
  • 1/2 can of corn
  • 1 cup tomato sauce (tomato sauce)
  • 4 eggs
  • salt to taste
  • black pepper to taste
  • nutmeg to taste

Way of doing

Grease a refractory, mix the drained peas and corn with the tomato sauce. Season with salt and pepper. Make a smooth layer and, with a spoon, open four cavities in the middle of the refractory. Gently break the eggs into these cavities. Sprinkle with nutmeg and bake in a medium oven (170ºC to 190ºC), covered with aluminum foil, for approximately 20 minutes. Serve it hot.
