Easy, quick and healthy recipes: Vegan Wrap

When you think about investing in healthy eating, you usually don't take into account that eating well can be simple and quick.


Nutritionist Melissa Pepper, in partnership with Canal MOVA, shows us a simple and incredibly nutritious recipe. In addition to being low in calories and vegan, Wrap is low glycemic, that is, it helps those who suffer from diabetes.

Recipe:

Sprouted Chickpea Paste
2 cups chickpeas (can be sprouted or boiled)
1 lemon
2 cloves of garlic or 1 onion
Himalayan salt (to taste)
2 tablespoons olive oil



To mount the Wrap:

Butter kale (5 large leaves)
Sprouted Chickpea Paste
Cucumber (1 unit)
Cherry tomato (10 pieces)

Other suggestions:

– Sunflower or sesame seeds
- Pepper
- Purple cabbage
– Rice leaves or seaweed to replace cabbage


To germinate the chickpeas:

Soak the beans for eight hours (one night), drain the water the next day and keep it moist inside the same pot, covered with a filo, for about three days or until it starts to sprout.


How to make:

– Beat the chickpeas with a little oil, the spices and a chopped onion until it forms a paste.
– Cut the cabbage leaf into a square shape
– Put some of the paste on the cabbage, with the rest of the ingredients.
– Roll up the cabbage, forming a kind of β€œbag”.
