But first, a little history…

Although its name has Dutch origins (“koekje” – pronounced “cukiê” – is short for “koek”, which means “small cake”), the cookie was created in England. The name “small cake” is due to the fact that the cookie was, in fact, a portion of the cake dough taken before the oven to test the temperature. And the British came to the conclusion that this test mass, which ended up taking the shape of a cookie, harmonized very well with traditional tea. As a cake batter, the “perfect” cookie is usually softer than a cookie.

Chocolate chips, on the other hand, are an American “plus” – an invention of Ruth Wakefield, who added to the recipe with pieces of chocolate, which she thought would melt. But this chocolate preserved its shape, and the recipe was a real success, becoming the image of the traditional cookie we have today. Another contribution from Uncle Sam's land was crunchiness.



Well, this is all history, and we don't know if all the facts were exactly like that. The only thing we are sure of is that these treats are delicious and, with more balanced ingredients, they can be consumed without any worries.

So let's get to the recipes?

Banana and oat cookies

Ingredients:

  • 2 bananas – preferably very ripe, because they are sweeter;
  • 1 cup of rolled oats;
  • Raisins and cinnamon powder.

Preparation:

Mash the banana very well and gradually add the oats and then the cinnamon (do not overdo it when sprinkling). Mix in the raisins, as if they were the chocolate chips (but don't leave them too far out of the dough, otherwise they risk burning). Shape the cookies and place them in a greased shape. Bake for approximately 15 minutes in a preheated oven at 180°C.

Ingredients:

  • 1 cup oat flakes;
  • 1 cup of whole wheat flour;
  • 1 cup of brown sugar;
  • 1 teaspoon of powdered chemical yeast;
  • Chia, cashew nut, flaxseed and sesame in your preferred measure;
  • 1 egg;
  • 2 tablespoons of butter;
  • Dark chocolate chips (can be semisweet too).

Preparation:

In a bowl, mix the oats, whole wheat flour, brown sugar and yeast. Then add the egg and butter, mixing until smooth. Put the chia, chestnut, linseed and sesame and part of the chocolate chips. Shape the cookies and place them on a greased baking sheet, finally spreading the remaining chocolate chips. Bake for approximately 15 minutes in a preheated oven at 180°C.

Cookies fit de whey protein

Ingredients:

  • 1 tablespoon of whey protein of your favorite flavor;
  • 3 tablespoons of brown sugar;
  • ½ teaspoon of chemical baking powder;
  • 1 cup of rolled oats;
  • Culinary sweetener to taste;
  • 1 egg;
  • 3 tablespoons of skimmed milk.

Preparation:

Mix all the ingredients well in a bowl until you get a homogeneous mass. Shape the cookies and place them on a greased baking sheet. Bake for approximately 15 minutes in a preheated oven at 180°C.


Diabetic cookies

Ingredients:

  • 2 tablespoons of wheat bran;
  • 2 tablespoons of oat bran;
  • Culinary sweetener;
  • 2 eggs;
  • 15 to 20 drops of vanilla essence.

Preparation:


Separate the yolks from the whites. In a bowl, mix all the other ingredients with the yolks. Beat the egg whites and gently fold them into the mixture. Shape the cookies and place them on a greased baking sheet. Bake for approximately 15 to 20 minutes in a preheated oven at 180°C.
