Healthy Oven Toast

You will need:

  • 12 very firm slices of wholegrain bread, cut approximately 2 cm thick;
  • 3 eggs;
  • 1 liter of skimmed milk;
  • 2 cinnamon sticks;
  • 1 pinch of grated nutmeg;
  • 2 lemon or orange peels;
  • 3 teaspoons of powdered sweetener;
  • 3 teaspoons of cinnamon powder;
  • parchment paper to line the form;
  • butter for greasing;
  • rectangular shape of 30 cm.

You will prepare like this:

Preheat the oven to 200 degrees Celsius. In a refractory, mix the milk, cinnamon sticks and lemon or orange peels. Dip each slice of bread in the milk, without letting it soften too much, but moistening it well and evenly. In a bowl, beat the egg until foamy and add the nutmeg. Completely moisten each slice in this mixture and arrange in a pan lined with parchment paper and greased with butter. Place in the oven and allow to brown for approximately ten minutes (varies according to the size and type of oven). Flip the slices over and brown (five to seven minutes). Remove from oven and let cool slightly. Mix the sweetener with the cinnamon powder on a plate. With a fork, pass each slice of french toast through the mixture and place on a serving platter. Serve immediately with a hot fennel, lemon balm or iced mint tea. This recipe serves four people!

Healthy French Toast for Vegans

You will need:

  • 6 very firm slices of wholegrain bread, cut approximately 2 cm thick;
  • 1 cup of almond, cashew, rice or vegetable milk of your choice;
  • ½ cup (tea) of skimmed milk;
  • ½ tablespoon of cornstarch (if rice milk is used, a tablespoon will be needed);
  • ½ teaspoon of cinnamon powder;
  • 1 pinch of turmeric or turmeric (needed for golden color);
  • 1 level tablespoon of coconut syrup or other sweetener for oven and stove.

You will prepare like this:

Grease a nonstick skillet with coconut oil or olive oil and set aside. In a pan, place the starch, turmeric and cinnamon. Mix and add the vegetable milk gradually, stirring to dissolve the previous ingredients. Bring the pan to a low heat and add the coconut syrup or sweetener and mix until it boils and thickens a little, at the point of light cream. Transfer the mixture to a plate and let it cool. Once warm, dip each slice of bread in this mixture so that it is completely covered. If you have leftover sauce, it can be served to those who want to add it to taste. Heat the reserved skillet a little and fry the slices over medium heat. Let it brown on one side and turn so that the other is also golden. Serve immediately with a hot ginger tea, lemon balm or an iced passion fruit juice. For two people!

It is important to remember that currently, in markets and large bakeries, we can find bread suitable for French toast. However, it is usually made with white wheat flour. So, unless another type of flour is not specified, use slices of wholegrain bread or cereal that you know is not “white” flour.
