For those who are used to having big parties at this time, this time, a smaller number of people will be needed, maybe even improvised, but it doesn't matter: supper is supper, and when that time comes, we start thinking about the dishes that we will prepare.



Typically, people tend to have dinner on the 24th of December, tasting the prepared delicacies and chatting until the wee hours, and on the 25th, they wake up later and enjoy the dinner of the day before for a lunch just as wonderful.

Turkey Sandwich Ingredients:

  • Slices of leftover Christmas turkey;
  • Leftover sauce from our Christmas turkey or, for a change, the substitution below:
  • Bread slices;
  • Dijon mustard;
  • cucumber pickles;
  • Cheese slices;
  • Chinese cabbage or iceberg lettuce strips.

Sauce replacement:

  • 1/3 cup balsamic vinegar;
  • 1/3 cup of honey;
  • 1/3 cup of water.

How to make a turkey sandwich:

Remove the remaining meat from the turkey. In a skillet, heat the rest of the sauce and, when it is bubbling, add the meat. Let it reduce and caramelize until the meat is very dark and shiny. In another skillet, toast the breads. To assemble the sandwich, spread mustard on one of the buns, cover with pickles, cheese, turkey and green leaves.

Ingredients:

  • 2 excited;
  • 1/2 cup of sugar;
  • 2 tablespoons of cornstarch;
  • 3 cups of milk;
  • 2 teaspoons of vanilla essence (optional);
  • 500 g of panettone;
  • 4 eggs;
  • 1 cup of milk;
  • 1/4 cup of wheat flour;
  • 1 tablespoon of butter.

Preparation:

In a medium saucepan, combine the egg yolks, sugar and cornstarch. Add the milk and mix well. Cook over low heat, stirring constantly, until thickened (about 10 minutes). Add the vanilla essence and mix. Remove from heat and let cool. Cover with plastic wrap in direct contact with the cream to prevent a film from forming. Wait for it to cool down. Cut the panettone into eight 2 cm thick slices horizontally. Cut each slice into four sections and set aside. In a medium bowl, mix the eggs with the milk and flour. Reserve. Brush a large nonstick skillet with a little butter and heat over medium heat. Dip the panettone slices in the egg mixture and fry them in the butter until golden brown on both sides (about 1 minutes on each side). Reserve on a platter. Brush the skillet with more butter as you cook the other pieces or when the french toast starts to stick to the bottom. Serve the toast warm with the cold cream on the side.

vegan sausage

A wonderful salad that serves as an accompaniment at supper and is delicious, also if served overnight. Ice cream, if you want a lighter lunch, this can be your main dish on December 25th.

Ingredients:

  • 1 cup carrots (grated);
  • 1/2 cup of green apple (chopped)
  • 1/2 cup corn (canned)
  • 1/2 cup celery (or celery) (chopped)
  • 1/2 cup olives (chopped);
  • 1 cup potato (cooked and diced);
  • 1 cup of peas;
  • 1/2 cup of raisins;
  • 1 cup jackfruit meat (shredded);
  • 1/2 cup mayonnaise (vegan)
  • 1 spoon of mustard;
  • 1/2 unit of lemon juice;
  • 1/2 cup parsley sprigs (chopped);
  • to taste • salt;
  • to taste • pepper.

Preparation:

Wash and chop the ingredients. Also cook the potato cubes in hot water until soft enough to be pierced with a fork easily. To prepare the celery, remove the skin with a knife and then finely chop. In a large bowl, place the grated carrot, chopped green apple, corn, celery, chopped olives, boiled potato cubes, peas, raisins. Then, if you like, add the shredded jackfruit meat. Add the vegan mayonnaise, mustard, lemon juice, chopped parsley and chives and season with salt and ground pepper to taste. Mix well, cover with plastic wrap and refrigerate for at least two hours before serving. Place on a nice platter and, if you like, sprinkle straw potatoes on top.



Tip: In this sausage, jackfruit “meat” was used, but you can make it with shredded smoked tofu. Store in the fridge for a maximum of 3 days, tightly closed in a pot, and preferably without the potato straw, as it withers.
