A delicious dessert for the holiday season.

Ingredients:

  • 1 and 1/2 cup of orange juice (about 3 oranges);
  • 1/3 cup dried apricots (chopped into pieces);
  • 1/2 cup of raisins;
  • 1/2 cup of blueberries;
  • 1/2 cup maple, agave syrup or cane molasses;
  • 1/3 cup of sunflower oil or other vegetable oil of your choice;
  • Zest of 1 lemon;
  • 1 tablespoon of flaxseed flour;
  • 1/2 dessert spoon of apple cider vinegar;
  • 1 cup of self-rising flour;
  • 1/2 cup of wholemeal flour;
  • 2 dessert spoons of baking powder;
  • 1 dessert spoon of cinnamon powder;
  • 1/3 dessert spoon of powdered ginger;
  • 1/2 dessert spoon of salt;
  • 1/3 tsp. of walnuts, 1/3 tsp. of almonds and 1/3 tsp. of hazelnuts).

Preparation:

Place the orange juice, apricots, raisins and blueberries in a bowl/pan and bring to a boil. Remove from heat, cover and set aside for 10 minutes.



Mix maple, oil, lemon zest, flaxseed and vinegar in a bowl.

Add to this mixture the orange juice with the fruits.

In another bowl place the flours, yeast, cinnamon, ginger, salt and nuts.



Add the liquid mixture to the dry and mix well.

Transfer to a small cake form, or an English cake form.

Bake at 180ºC for 40-45 minutes.

Allow to cool and remove from the mold in a ready-to-serve container.

Decorate to taste with dried fruit, nuts, coconut shavings, depending on your taste, then just serve and enjoy. Enjoy your food!
