Chapati Recipe (Indian bread baked on an iron or stone plate)

Leavened breads are not consumed in India, so the breads consumed there are healthier and simpler to make. From a basic dough it is possible to produce numerous types of breads such as: Chapati, Puri, Paratha, etc.

Ingredients

2 ½ cups whole wheat and white flour
1 teaspoon salt
warm water (enough to set the stitch)


How to Prepare

Mix the flour and add lukewarm water to the dough. Knead the dough for 15 minutes, until it becomes not only firm but also smooth and soft. Form balls about 4,5 cm in diameter and roll them out with a wooden roller. Heat the iron or stone plate and place the chapatis on to bake. Wait one to two minutes, turn to the other side, leaving the same time. With a tongs, take each chapati and place it over the gas flame so that it stews. When it's stewed, spread some ghee and leave it wrapped in a cloth until serving time.


Note: if you prepare the chapati in a wood stove, it will give a much better result. Serve as a starter along with chutney (variety of spicy and sweet and sour sauces and antipasti).
