5 Recipes for a Delicious Valentine's Day Dinner

2 – Spaghetti carbonara

Ingredients:

  • 100g of spaghetti;
  • 50g of bacon;
  • 2 cloves of garlic;
  • 1 whole egg;
  • 2 excited;
  • 1/3 cup of grated Parmesan cheese;
  • Salt and pepper to taste.

Preparation:

Cut the bacon into cubes and fry them in a skillet until crispy. Add the garlic and turn off the heat. In a bowl, place the egg and yolks, grated Parmesan cheese, salt and pepper. Beat everything with a fork until smooth.

In another pan, cook the pasta and drain. Place the already cooked pasta in the skillet and mix with the garlic and bacon for about 1 minute. Then, add the egg mixture and stir well until the heat of the pasta cooks the eggs. Serve immediately so it doesn't lose its creaminess.

3 – Salmon with asparagus, arugula and cherry tomatoes

This is a healthy, light and tasty option that needs few ingredients for its preparation.

Ingredients:

  • 2 salmon fillets;
  • 1 teaspoon of sage;
  • 1 teaspoon of thyme;
  • 1 teaspoon of rosemary;
  • 1 tablespoon of olive oil;
  • Salt and black pepper to taste;
  • A dozen cherry tomatoes cut in half;
  • 4 fresh asparagus, peeled and pre-cooked in boiling water for about 3 minutes;
  • 1 bunch of arugula.

Preparation:

Arrange the salmon fillets skin side down in a shallow dish and season with sage, thyme, rosemary, salt and pepper. Place a drizzle of oil in a non-stick skillet and brown the fillets on the herb side. Then turn and let the skin side brown a little.



In another skillet, sauté the asparagus in the oil along with the tomatoes, salt and pepper. Then add the arugula leaves and sauté for 30 seconds on high heat. To assemble the dish, place the asparagus sauté on the bottom and, on top of it, the grilled salmon.

4 – Mushroom risotto

This Paris mushroom risotto with a hint of Sicilian lemon is perfect for vegetarian and vegan couples.

Ingredients:

  • 1,5L of vegetable stock or boiling water;
  • 250g of clean and sliced ​​Paris mushrooms;
  • 1 small onion, chopped;
  • 3 chopped garlic cloves;
  • 1 and 1/2 cups of arborio rice tea;
  • 1/3 cup of dry white wine;
  • Juice of 1/2 Sicilian lemon;
  • Zest of 1 Sicilian lemon;
  • Chives, chopped to taste;
  • Salt to taste;
  • Olive oil to taste.

Preparation:

In a frying pan, put a thread of olive oil, add the mushrooms and a little salt and sauté until the mushroom water dries up. Add half the onion and garlic, and sauté until golden. Add 1 cup of the vegetable stock or hot water, then remove from heat and set aside.

In another pan, sauté the rest of the onion in a drizzle of olive oil until golden. Then, pour in the arborio rice, season with a little salt and sauté for about 1 minute. Add the white wine and the lemon juice, mixing constantly.


With the help of a ladle, gradually add the rest of the broth. Remember to mix constantly, until all the water dries up and the rice is almost completely cooked. Then pour the mushrooms with the broth and mix again.


Check if the rice is already cooked and then turn off the heat. Add the lemon zest, the chives and drizzle with a drizzle of olive oil. Is ready!

5 – Cheese fondue

Fondue is a traditionally romantic recipe and goes well with Valentine's Day. This version is very easy to make and is delicious.

Ingredients:

  • 1 clove of garlic;
  • 1 cup of sour cream;
  • ½ cup of cottage cheese;
  • 1 cup of cheese cheese;
  • 1 cup of mozzarella cheese;
  • 1 Italian bread cut into cubes;
  • 1 pinch of nutmeg (optional)

Preparation:

Rub the garlic clove on the bottom and sides of the pan. Add the cream and cream cheese and heat over medium heat. Add the rest of the cheeses and the nutmeg and mix well until everything is melted and well incorporated.

Serve hot, preferably with Italian bread cut into cubes or any other bread of firm consistency that does not fall apart as it is dipped in the cheese.
